If Tex Mex is one of your favourite cuisines, then this pizza is your new best friend. With a spicy tomato base topped with refried beans, melted cheese and fresh avocado, there’s no excuse not to give it a try. Who’s got the tequila shots?
Ingredients
Makes 1x 12”/16” pizza
250/330g (8.8/11.6oz) classic pizza dough
4-5 tbsp classic pizza sauce
1/2 tsp chilli powder
1/2 tsp cumin powder
Handful of grated cheddar or shredded mozzarella
1/2 of a small red onion, sliced into rings
1/4 tin of mixed beans, or refried beans
1 small avocado, sliced
1 small gem lettuce, finely chopped

For the sauce for this pizza, we recommend preparing our easy Classic Pizza Sauce. With a hint of garlic, salt and basil, it's the ideal pizza sauce that will help to bring out the flavours in the other ingredients used here.
Fire up your Ooni pizza oven. Aim for 500˚C (950˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.
Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out and lay it out on your pizza peel.
Using a large spoon or ladle, spread your sauce evenly across the base of the pizza. Then, sprinkle the chili powder and cumin over the top. Finally add your cheese, followed by the chopped onion and beans.
Slide the pizza off your peel and into your Ooni pizza oven. Cook for 1-2 minutes, making sure to turn the pizza regularly.
Remove the pizza from the oven and add a bed of chopped lettuce, followed with a topping of avocado slices. Season with your flavours of choice and serve. If you’re feeling the heat, we’d recommend a little drizzle of your favourite hot sauce too.
