1. Preheat the oven to 160°C, then place the chipotle peppers on a baking sheet and toast them until they’re fragrant — about 10 minutes.
2. Pour the honey into a small saucepan, add your toasted chipotles and warm the mixture over a medium heat until it’s melted and easy to stir.
3. Transfer your hot honey to a sealed container and let it sit overnight at room temperature; then, rewarm the mixture and strain out the peppers.
