This pizza from Ooni product designer Will celebrates International Hawaiian Pizza Day with a citrusy twist on the classic: infused pineapple with lime juice and zest is paired with smoky pimento chorizo and fresh, herby coriander for an explosion of flavour, taking those salty-sweet notes to the next level.
Ingredients
Makes 1x 12”/16” pizza
250/330g (8.8/11.6oz) classic pizza dough
4-5 tbsp classic pizza sauce
4-8 slices chorizo
Zest and juice of 2 limes
40g (1.4oz) fresh/tinned pineapple chunks
40g (1.4oz) fresh mozzarella, torn into chunks
Handful fresh coriander, finely chopped

For the sauce for this pizza, we recommend preparing our easy Classic Pizza Sauce. With a hint of garlic, salt and basil, it's the ideal pizza sauce that will help to bring out the flavours in the other ingredients used here.
Place the juice and zest of your limes in a small bowl or tupperware dish, then add your pineapple chunks. Seal with an airtight lid and let infuse, ideally overnight in the refrigerator.
Fire up your Ooni pizza oven. Aim for 500˚C (952˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.
Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out and lay it out on your pizza peel. With a large spoon or ladle, spread an even layer of sauce over the base of your pizza. Top with your mozzarella chunks, then add your chorizo, and finally your lime-infused pineapple chunks!
Slide the pizza off the peel and into your Ooni pizza oven. Cook for 1-2 minutes, making sure to turn the pizza regularly for an even cook. Once cooked, remove the pizza and top with a garnish of fresh coriander to finish.
