Note
1: Fire up your Ooni oven, aiming for 450 °C.
Use an infrared thermometer to check the temperature of your baking stone for a fast, accurate reading.
2: In a small bowl, mix 20 grams of liquid honey with 2.5 grams cayenne pepper; adjust accordingly to taste if needed.
Set aside.
3: On a well-floured work surface, roll out your dough into a 30 centimetre circle.
4: Gently slide the dough onto a lightly-floured pizza peel.
5: Use a spoon to spread the cream over your dough in a circular motion; then evenly sprinkle on the mozzarella, followed by the thick slices of goat cheese.
6: Launch the pizza into your oven and cook for 60 to 90 seconds, rotating every 20 seconds to ensure an even bake.
7: Take the pizza out of the oven, slide it onto your serving board and garnish with raisins, mint leaves and a few splashes of spiced honey.
